Last fall, I embarked on perhaps the most ambitious journey I’ve made so far solely in pursuit of a meal. Chef Prateek Sadhu’s Naar is high in the Himalayas in India’s Himachal Pradesh, but the dreamy setting is not easy to get to: I flew to Mumbai, then to Chandigarh, and drove three hours up treacherous, twisty mountain roads.
